Clem's Scrambled Eggs à la Bill Granger
 

 

Bill Granger was one of my favourite food heroes.
He introduced modern Aussie culinary fare to world outside. His creamy scrambled eggs brought him public attention and fame (still available at the restaurant he started in Darlinghurst, Sydney).
Tragically, Bill went too early to join food heaven on Christmas Day 2023. He was only 54.

In his honour, I made his style of scrambled eggs for brekkie this morning. You can too:


INGREDIENTS

For one serving:

  • Two large eggs
     
  • 75 mL of heavy cream
     
  • A nob of butter
     
  • Salt
     


METHOD

  • Combine the eggs and cream and beat by hand until there are no more egg streaks.
     
  • Add a dash of salt to taste.
     
  • Heat up a saucepan to medium high heat.
     
  • Add a nob of butter and spread it.
     
  • Pour all the egg/cream into the pan.
     
  • Wait some 20 seconds and then begin folding/drawing the egg mix from the edge to the centre on all sides.
     
  • Keep doing this until the egg mix has come to a soft set, before being fully cooked.
    Do not overdo the folding. Only four of five times is plenty.
     
  • Remove the pan from the heat before the egg is fully cooked.
    These scrambled eggs are done to slightly runny.
     
  • Serve with your favourite pastry and garnish the scrambled eggs with some baby spinach as Bill served it.
