Clem's Dim Sum Style Mango Pudding

 

My two favourite desserts at a dim sum sitting are Taufu Fah and Mango Pudding. While Taufu Fah can be served either hot or cold, Mango Pudding is always a cold dish because of the gelling agent used.

Mango pudding as offered at dim sum is not difficult to make. Here's how:


INGREDIENTS

For a bit more than three cup measures of pudding:

  • 250 g mango (fresh or frozen) for the pudding mix
    Plus a quantity of mango pieces for adding to the pudding (see Method)
     
  • 1.5 cups of caster sugar (any sugar will do but caster will dissolve quicker as it is finer)
    Vary the quantity to taste
     
  • 2 tablespoon measures of gelatin powder
    Note that:
    (i) the quantity determines how firm the pudding will turn out
    (ii) the quantity needed is affected by the quality of the particular gelatin used

    The quantity advised here should result in a soft, yet firm pudding.
    Those who prefer a very firm pudding may experiment by supplementing the pudding mix with some agar powder
     
  • 1 cup of evaporated milk
    Plus extra for use topping
     


METHOD

  • Prepare the gelatin by slowly adding the gelatin powder to around 30 mL of room temperature water.
    Let the gelatin hydrate (bloom) over some ten minutes.
     
  • Puree the 250 g of mango.
    If you can find fresh mango, choose very ripe fruit.
     
  • Add 1 cup of sugar and mix through.
     
  • Add 1 cup of evaporated milk.
    Mix well.
     
  • Note that the quantities of mango, water and milk may be substituted for each other depending on how creamy one wishes the pudding to be, and how much mango taste is deemed to be sufficient. The final colour of the pudding will also be determined by the relative quantities of the three ingredients.
     
  • Add 1 cup of boiling hot water to the hydrated gelatin which was previously prepared.
    Stir vigorously for several minutes to ensure all the gelatin dissolves.
     
  • Add the hot gelatin sol to the mango/milk mix and stir well.
     
  • Add mango pieces to the bottom of the containers which you wish to hold the pudding portions.
     
  • Add the pudding mix to the containers and then place them in a refrigerator to cool and set.

Dim sum style mango pudding.
Evaporated milk is often used as a topping.
