Clem's Beef and Chicken Satay

 

Meat on a skewer is found in many cuisines around the world e.g. shish kebab; sheekh kebab; doner kebab; kofta; yakitori; tandoori; souvlaki; brochette; shashklik;  and espetada.

In South East Asia, the satay is reknown. It was the signature food dish on board Singapore Airlines for many years. The variants in this BBQed meat skewer are due to differences in the spices used in both the marinade and in the satay sauce. Last night I marinaded chicken (thigh fillets) and beef pieces (chuck tender) in spices which are Malaysian in taste. The skewers were BBQed the following day, with a basting of coconut oil + marinade. The spices used in the satay sauce which was prepared a few days earlier was also to Malaysian taste. The sides are Ketupat (compressed) rice; cucumber and red onion.
Chilli oil was added to the satay sauce separately according to taste.
