Clem's Beef Short Rib Sup Tulang

 
Sup Tulang in Malay means "bone soup". It is slow cooked meaty beef bones in a aromatic spicy soup. The key spices are coriander seed, cinnamon, and star anise. The spicy hotness comes from the addition of pepper and chilli. Here is a short-cut way to make this soup in a jiffy:

 

1. Ingredients
 

  • Sup Tulang ready-mix paste.
    1 or 2 packets (depending on how strong you wish the soup to be).
    I use Adabi brand Sup Tulang paste:

  • Around 1 kg Beef Ribs (short or otherwise).
     
  • Potatoes; cubed.
     
  • 1 or 2 brown onions (or more if you choose to use shallot onions).
     
  • Whole chillis (dried or fresh); sliced length-wise and de-seeded if you wish to moderate the spiciness).
     
  • Black Pepper; coarse ground.
     
  • Coriander leaves; chopped (for garnish)
     

2. Method

  • Wash the ribs.
     
  • Place the ribs in a saucepan or pressure cooker.
     
  • Add water to twice the depth of the ribs (you can judge how much water to add according to how much soup you wish to end up with).
     
  • Slice the onions and then add to the ribs.
     
  • Add coarse ground Black Pepper according to taste.
     
  • Bring everything to the boil and then lower the heat to let the soup simmer.
    In a saucepan you will probably need to simmer for some two hours or more to get the meat on the ribs to become tender.
    In a pressure cooker set at 15 pounds per square inch, I find that cooking for some 30 minutes will result in tender meat.
     
  • Halfway through the simmering time, add the sup tulang paste.
    At this time also add as much cubed potato as you would like.
     
  • Cook until the end of the set time and then test the potatoes and meat for doneness.
     
  • Adjust your soup with condiments.
    Your main condiment will be salt.
    I used fish sauce.
     
  • Garnish with chopped coriander leaves.
     
  • Serve hot.
