Red Beans with Shaved Milk Ice
 

 
 

Almost every child growing in the 60s in Kuching, Sarawak will be familiar with Ang Tau Peng or Red Beans with Coconut Milk Ice. The authentic red beans are adzuki beans whilst they are often replaced with the larger Red Kidney Beans. The ice is usually shaved off a large block and then slathered with coconut milk. The modern versions often offer a choice of either coconut milk or evaporated dairy milk.

Making the adzuki beans part is easy - just pressure cook washed beans in an equal amount of water for some ten minutes  (or more for a softer result) and you are done.

I made the ice part out of a milk sherbet. This is 350 mL of milk (your choice - use plain milk supplemented with cream or evaporated milk for a richer finish) with 3 tablespoons of sugar (you can use white, brown, coconut or gula apong). Get the sugar well dissolved and then freeze the mixture in a Ninja tub. After 24 h, the frozen milk is shaved under a sorbet setting in a Ninja Creami.
