Clem's Scallops with Broccoli and Shitake Mushroom


Scallops always go well with Brassicaceae vegetables. For me, they go equally well with either kailan or broccoli.

The broccoli was blanched and then plated in a ring around the serving dish. Dried shitake mushroom were soaked in hot water until soft, blanched and then plated in the middle of the broccoli ring. The scallops were pan seared and then placed onto top of the mushroom.

The sauce for this dish was fried garlic and ginger onto which oyster sauce was added and made into a gravy with water and starch slurry. A dash of Shaoxing yellow wine and pepper were also added. When done, the sauce was ladled onto top of the broccoli and scallops.
