Clem's Doubletree Chocolate Chip Cookies

 

 

One feature of the Doubletree by Hilton Hotels is that you are given one of their signature cookies upon check-in. I first come across them at the Doubletree at Ampang, Kuala Lumpur in 2011. I thought that they were rather exceptional cookies. Not long after that year, the Doubletree published their recipe for the cookies and I have made them a couple of times. You can too. Here's how:


 

 

 

 

INGREDIENTS

  • 226 g butter; softened.
  • 360 g brown or white sugar.
    Note:
    This quantity will make for a very sweet cookie.
    If you want something less cloying, you might try halving the quantity but know that the amount of sugar which is added will affect the texture of the cookie outcome.
  • 280 g of plain flour.
  • 45 g of rolled oats.
  • Two large eggs.
  • 190 g of chopped walnuts.
  • One teaspoon of vanilla extract.
  • One quarter teaspoon of fresh lemon juice.
  • 250 g of chocolate chips
  • One teaspoon of salt.
  • One half teaspoon of cinnamon powder.
  • One teaspoon of baking soda.


METHOD

  • Cream the butter and sugar in a mixer or mix vigorously by hand.

  • Add the eggs, vanilla extract and lemon juice.
  • Mix vigorously until the mix lightens and becomes fluffy.
  • With the mixer on low speed, add the flour, oats, baking soda, and cinnamon.
    Do not over mix. Some 30 to 45 seconds will suffice.
  • Fold in the chocolate chips and chopped walnuts by hand.

  • Pre-heat your oven to 150 degrees centigrade.

  • Take two table spoon portions of the mix and place onto baking paper in a baking tray.
    You can use an ice cream scoop as I did to make the transfer.

  • Leave plenty of space between the portions (at least 2 - 3 centimetres).

  • Bake at 150 degrees centigrade for at least 20 minutes.
    Monitor the cookies to ensure that they don't burn.

  • When done, remove from the oven and let the cookies cool on a rack to let them set (harden and crisp up)
