This confectionery is made with melted brown sugar and toasted
sesame seeds.
The difference between a chewy and brittle bar is separated by
only a few degrees of temperature.
Go too high and the result will be a sesame brittle. For a chewy
bite, the melt has to be controlled to around 110 degrees
centigrade. A relatively difficult confection to make but worth
the effort.
