
Fry the noodles (Hokkien type - its thick,
yellow and oiled) with a bit of oil

Add soya sauce (dark or light as you
prefer) and set aside

Fry red (Bombay) onions, garlic,and chilli
(in that order because of browning time)

Add chicken and a bit of oyster sauce
(optional), and later, some prawns
|

Add your favourite curry powder to taste,
and later beans spouts and vegetable of your choice (choi sum or
bak choi are good)
|

Return the previously fried noodles to the
wok; crack some eggs (two or more) and mix into the noodles; fry
until cooked.

Serve with a slice or two of calamansi (Citrofortunella
microcarpa)
